Eggplant and zucchini cut into large cubes about 1.5 cm. Peel the peppers with a vegetable peeler, then cut in half, remove seeds and dice. Peel the onions and garlic and chop finely.

Heat the olive oil, onions sauté 5 min., Garlic for 1 minute. Braise, add eggplant, after 4 min. Courgettes and peppers to give. Everything still simmer 5 min., Turning regularly. Deglaze with the tomatoes, salt, pepper and oregano to give. Cover and cook over low heat for 15 minutes. Cook.
